The delicious diamond-shaped Terzetti biscuits, are prepared by grandmothers and children in Rieti and throughout Lazio during the Christmas Season.

The dough is a mixture of flour, chopped walnuts, honey and grated orange and lemon zest. The fragrant, irresistible Terzetti can slightly differ from one area to another, but the basic ingredients are the same.

Preparation
Mix the flour with chopped walnuts, grated orange and lemon zest, a pinch of pepper and hot honey and then roll out the dough on a wooden surface to a thickness of about one centimetre. Cut out the biscuits into diamonds and bake them in the oven at 180° for 15/20 minutes. Terzetti are better enjoyed after two or three days, when they have reached the perfect texture.
