Canino PDO Extra Virgin Olive Oil
This extra virgin olive oil was awarded PDO recognition in 1996; it is so named precisely because it is produced in Canino, a town on the border with Tuscany, in what is called the Maremma of Lazio, in the midst of a territory of great naturalistic interest.
The oil is mostly obtained from olives of the Caninese variety, grown on hilly land situated between 250 and 450 metres above sea level. With its taste of fresh fruit, it is particularly suitable for use raw on vegetables, in legume soups, in traditional soups and drizzled on bruschetta.
It has an emerald green colour with golden hues, a very low acidity and a fairly strong taste, with a rather marked aroma of olives and an aftertaste similar to wild thistle, therefore tending to bitterish and slightly spicy, especially when it is fresh.
In gastronomy, it is mainly used by those who prefer a cuisine with strong flavours. In the first week of December, in the historical centre of the Maremma village, the Canino Olive Festival is celebrated during which, in addition to tasting the “new” oil on appetizing bruschettas and other traditional dishes, interesting guided tours of the oil mills are organised.
