The Pizza Rentorta Fiamignanese enters the PAT List

The Pizza Rentorta Fiamignanese is one of the most traditional and simple dishes of the peasant cuisine from Cicolano, in the province of Rieti. This speciality recently entered the PAT list (Prodotto Agroalimentare Tradizionale ) of Lazio. Also thanks to eight other excellent typical foods recently entered the already rich 472 PAT products regional basket, Lazio ranks second in the list among the Italian regions.

The list includes agri-food products with a particular historical-cultural value recognized by the Ministero dell’Agricoltura, della Sovranità Alimentare e delle Foreste.

The Pizza Rentorta Fiamignanese is a poor dish that was eaten on holidays. It is very simple to prepare: the dough is kneaded with flour and eggs, usually stuffed with a mixture of sausage and cheese, and finally wrapped and twisted on itself before being baked in the oven. Today there are many variations of the stuffing, all of them with a unique flavour.

The recognition of this traditional dish is also a good opportunity for nature and good flavours lovers to get to know the Valle del Salto and the Cicolano area, in the province of Rieti, which includes not only Fiamignano but also the villages of Borgorose, Pescorocchiano and Petrella Salto.

The eight other PAT excellences in the Lazio basket come from different areas. Around Rieti we can taste the

pizzicotti alla liscianara and the stringozzi aspresi, in Ciociaria the sagne and beans from Arnara, in Tuscia Viterbese acqua cotta, Etruscan fettuccine with Ferlenghi mushrooms and sausage, and Mirandò, or Mirandot, from Tarquinia.
