A few kilometres from the Rome – Naples A1 Motorway, Morolo is a small town on the slopes of the Lepini Mountains, at an altitude of 400 metres, still inhabited within the ancient walls.

The village, very ancient and situated on the route of commercial traffic and armies to and from Rome, was dominated in the 13th century by the Roman family of Colonna, who owned the Castle.

The old town, very impressive, is a succession of alleys, staircases, portals, and squares, typical of medieval towns, leading up to the scenic Collegiate Church of Santa Maria, from the mid-1600s.

In addition to the remains of the Castle, worth a visit are the Collegiate Church from the mid-17th century, with characteristic bell towers, with bronze doors, and the modern beautiful gates, and the church of Madonna del Piano from the 1600s.

Excellent products include the Ciambella and the rare Gran Cacio di Morolo, both raw milk and stretched-curd cheeses, typical of the Ciociaria dairy tradition.

Each piece is handmade following the ancient recipe that requires the use of only three ingredients: milk from local farms, veal rennet, and sea salt.

The cheeses are then smoked with beech chips and greased with extra virgin olive oil.
