Porchetta festival, the gentle taste of Ariccia

The Porchetta Festival of Ariccia is a most awaited event, celebrating, in September, an excellence of the Italian gastronomy. The preparation of porchetta (roasted pork) is an art, it must be crispy outside and tender inside.

The feast of the porchetta, since 2011 a PGI product, is said to originate from the ancient sacrifices of pigs at the Jupiter Temple on Mount Cavo. The preparation of this speciality follows precise rules in the processing and seasoning of the meat with rosemary, garlic and black pepper.
